I was playing around with frosting techniques with this batch of cupcakes (ordered by a manager for his Easter dinner last year). I wanted something that looked like Easter, but I didn’t want to just make a boring old pastel colored frosting. So I attempted, for the first time, to “swirl” my frosting.
After I made a single batch of vanilla buttercream frosting, I divided the frosting into two parts. I set aside the white buttercream and then divided the remaining half of the frosting by four. Each fourth was then dyed to a particular hue (above, I did mint green, yellow, pink and turquoise).
I grabbed a plastic, disposable piping bag and started by smearing (using a rubber spatula) the white frosting onto one side of the bag. Using a separate, clean spatula, I then took one of the colors and smeared it on the other (clean) side of the piping bag. When that was done, I tied of the bag and started piping. The colors met in the middle as they came out of the piping tip, givnig me this pretty swirl of colors. The turquoise color was a little harder to control – I think because it was so much dark than the others. But all in all, the effect was successful and made for some pretty Easter cupcakes.
